Tempting Tuesday Recipe: Honey Almond Cookies

If you have a sweet tooth or enjoying cookies, you will love this recipe! These cookies are a mix between a biscotti and a real cookie. They go well with tea or coffee and are a surprising hit with friends. Enjoy these "healthy" cookies, but don't eat them all in one sitting! :)

Honey Almond Cookies
Ingredients:
1 cup raw unsalted whole almonds, lightly toasted
1 1/4 unbleached whole-wheat pastry flour 
1 cup unbleached all-purpose flour
1 tsp baking powder
1/2 tsp sea salt
2/3 cup natural, organic liquid honey
1/4 agave nectar
1/3 coconut butter, melted
1/4 cup unsweetened applesauce
1/4 ground flaxseed
1 large egg
1 tsp vanilla extract
1/4 sliced almonds, toasted (for garnish)

Method:
  1. Ground raw almonds in food processor. Dump into large mixing bowl. Add flours, baking powder and salt. Mix well to combine.
  2. In another medium bowl mix honey, agave nectar, butter, applesauce, flaxseed, egg and vanilla. Mix well.
  3. Combine wet and dry ingredients. 
  4. Cover dough and place in refrigerator for one hour to allow dough to set.
  5. Preheat oven to 350 degrees.
  6. Line baking sheet with parchment paper.
  7. Use a 1 Tbsp measuring spoon to scoop dough and shape into balls. Place cookie on sheet and press down with thumb.
  8. Bake each sheet of cookies for 12-15 minutes.
  9. Remove from oven and cool. Place almond slivers on top of cookies. 
  10. ENJOY!
